Process | Natural – co-fermented. The process begins with the shaking of the fresh cherry, then it begins with anaerobic fermentation for 72 hours and then an oxidation process for 36 hours, after which time the banana must is added (fruit and peel macerated and previously fermented) with water to cool the mass and it is left for 72 more hours. After the time is up, it is drained and taken to the dryer. |
